Bee Keeping Profession in the Farmers Tab. While not an essential profession, bee keeping can be used for multiple reasons. Bee's wax to be used for candles instead of tallow, honey for the cooks, and bee boxes that need to be opened and monitored so they can pollinate across a very large are or neighboring field. And maybe have to different species of bees. Regular honey bees and killer bees, since one is more aggressive than the other.

Important items to be crafted for the Bee Keeper profession is bee keeper clothing to protect from bees attacking you while harvesting honey. Bees can drastically slow you down while harvesting within 5 blocks of their box without proper protection. A smoke gun used to make the docile, but with the negative effect of keeping them from producing more honey until the effects of the smoke wears off.
